BRUSSELS SPROUTS WITH LARDONS & ALMONDS
HANDS-ON TIME 10MIN. COOKING TIME ABOUT 10MIN. SERVES 8 ✶✶ 1kg (2lb 3½oz) Brussels sprouts ✶✶ 15g (½oz) butter ✶✶200g (7oz) smoked bacon lardons ✶✶25g (1oz) flaked almonds ✶✶ 1tbsp chopped chives, optional 1 Bring a large pan of salted water to the boil. Add the sprouts and boil for 3-5min until just tender. 2 Meanwhile, melt the butter in a small frying pan and fry the lardons for 3min until golden. Add the almonds and fry for 1min until toasted. 3 Drain the sprouts well and empty into a warmed serving bowl. Toss through the lardon mixture and season. Garnish with chives, if using, and serve. GH TIPFor chestnut lovers, just before serving, toss through a handful of them, cooked, peeled and roughly chopped.…
