PARMESAN PARSNIPS

HANDS-ON TIME 15MIN, PLUS DRYING. COOKING TIME ABOUT 1HR 10MIN. SERVES 8 ✶✶ 1.2kg (2lb 11oz) medium parsnips, cut into quarters lengthways ✶✶ 50g (2oz) plain flour ✶✶ 50g (2oz) Parmesan, grated ✶✶ 3tbsp olive oil 1 Preheat the oven to 190°C (170°C fan) mark 5. Bring a large pan of salted water to the boil, add the parsnips and cook for 3min. 2 Drain and leave the parsnips in the colander to steam dry for 10min. When dry, tip into a large bowl and toss through the flour, Parmesan and plenty of seasoning. 3 Put the olive oil into a large roasting tin and add the coated parsnips (discarding any dry mix).
