GLAZED TURKEY CROWN

HANDS-ON TIME 15MIN, PLUS RESTING. COOKING TIME AROUND 2HR. SERVES 8 ✶✶8 rashers smoked streaky bacon ✶✶ 1.9kg (4lb 3½oz) turkey crown ✶✶50g (2oz) butter, softened ✶✶5 tarragon sprigs ✶✶200ml (7fl oz) hot chicken stock ✶✶ 1tbsp wholegrain mustard ✶✶ 1tbsp runny honey 1 Preheat the oven to 190°C (170°C fan) mark 5. Lay a bacon rasher on a board and run the blunt side of a knife across the length of the rasher a few times to stretch it. Repeat with the other rashers. 2 Weigh the turkey and work out the cooking time: allow 20min per kg (2lb 3½oz) plus 1hr 10min – or follow the pack instructions.
