CHICKEN LIVER & THYME PARFAITS

HANDS-ON TIME 30MIN, PLUS CHILLING. COOKING TIME ABOUT 30MIN. SERVES 6 ✶✶200g (7oz) butter, softened ✶✶ 1 onion, finely chopped ✶✶800g (1lb 12oz) chicken livers ✶✶2tbsp brandy ✶✶¾tbsp thyme leaves, plus extra to garnish 1 Melt 1tbsp butter in a frying pan. Gently cook the onion, covered, for 20min until soft and translucent. Meanwhile, trim and discard any green bits or sinews from the livers. 2 Put the cooked onion into a food processor. Return the pan to a medium-high heat and add half the livers. Cook for 4min, turning once. Add the cooked livers to the processor. Return the pan to the heat and cook the remaining livers, adding the brandy and thyme for final 30sec of cooking. Scrape the pan contents into the processor, with 75g (3oz) butter, plus seasoning.
