MAKES 16 ✶✶ 1 duck breast ✶✶1/2tsp Chinese five-spice powder ✶✶2 large flour tortilla wraps ✶✶2tbsp plum sauce, plus extra to serve ✶✶1/2 cucumber, cut into matchsticks ✶✶ 3 spring onions, trimmed and thinly sliced ✶✶ 16 long chives, to tie, or cocktail sticks, to secure 1 Preheat the oven to 190°C (170°C fan) mark 5. Dry the duck skin with kitchen paper. With a sharp knife, slice the fat into a criss-cross pattern (making sure not to cut into the meat). Rub the Chinese five-spice powder into the skin. 2 Heat a frying pan over a low-medium heat and add the duck, skin-side down.
