PASTRAMI ON RYE

Delicious mini versions of a deli favourite.

HANDS-ON TIME 10MIN. MAKES 12 ✶✶2 slices pumpernickel bread ✶✶ 3tbsp mayonnaise ✶✶ 1tsp wholegrain mustard ✶✶2 slices pastrami ✶✶Sliced cornichons, to garnish 1 Use a 4cm (11/2in) round pastry cutter to stamp out 12 circles from the pumpernickel bread slices. Next, in a small bowl, mix together the mayonnaise, mustard and some seasoning. 2 Cut each pastrami slice into 6 equal pieces. Spread or pipe the mustard mayonnaise on to the pumpernickel rounds and top with a folded piece of pastrami. Top with cornichon slices and a fresh grinding of black pepper, and serve. GET AHEADAssemble up to 1hr ahead. Loosely cover with clingfilm and chill. Allow to come up to room temperature before serving.…
